The 'Laura Restorer' Salad

We all try and eat healthily most of the time but it’s no fun becoming a crazed food-fascist and being so obsessed with what you eat that no one wants to invite you round for dinner! At Wildfitness we promote a 5:2 rule. Try and eat well 5 days a week and then don’t worry about it at the weekend. However, I usually find that if I’ve eaten junk for a couple of days my body starts craving natural goodness – particularly dark greens and raw veg. Now, I’m not going to go into the nutritional detail of this salad. The key thing is that all the ingredients are real, recognisable foods. All I really know is that instinctively it hits the spot – making me feel restored & full of healthiness – and it’s darned tasty too!

The "Laura Restorer' Salad!

Ingredients (for one):
Handful of baby spinach leaves (uncooked)
4-5 stalks of purple sprouting/broccoli (very lightly steamed)
½ an avocado
1 tomato
1 small cooked beetroot
1/3 of a red pepper
4-5 dried apricots
Sunflower and pumpkin seeds

Dressing: Olive oil and ½ lemon

Method:
Chop up all the veg into chunky bite-sized bits and put in bowl. Sprinkle on top the apricots (chopped up smaller) and the seeds. Finally drizzle on some olive oil and squeeze on the juice of half a lemon. If you’re hungry and want some animal energy too, I sometimes eat this with mackerel.
Tuck in and feel nature’s goodness restore you to your former self!
