This recipe is an old favourite on our Wildfitness courses in Kenya. It is rich and warming and delicious AND of course abides by our Wild Eating guidelines so is full of good stuff. Enjoy!

Ingredients (serves approx 5)
500g Mincemeat
2 Red onions, peeled and chopped
2½ Tomatoes, Chopped
½ Bay Leaf, Crumbled
2.5 Pepper Corns, crushed
4 Garlic Cloves, Crushed
1 Aubergine, thinly sliced lengthways
1 Courgette, thinly sliced lengthways
2 Sweet Potatoes, peeled, thinly sliced and blanched
1.5tsp Coconut Oil
125ml Beef Stock
1tbsp Tomato Paste
For the Tomato Sauce
5 Tomatoes, chopped & pureed
1 tbsp Tomato Paste
1 Red Onion, chopped
1 garlic cloves, chopped
2 Sweet Potatoes
150 ml Fresh Coconut Milk
Method:
1) Heat the oil in a pan. Add the garlic and the chopped onions until soft.
2) Add the mince meat and fry for 10mins, or till cooked through.
3) Add the pepper corns, bay leaf, tomatoes, and tomato paste. Then add the beef stock, give it a good stir and let it simmer for about 20 mins or till well combined and with a thickened sauce.
4) While that is simmering, grill the eggplant and courgettes in a frying pan with very little oil, till soft. Keep to the side.
5) For the Tomato Sauce: in a separate pan, cook the garlic & onions with a little oil till soft.
6) Add the fresh tomato puree and cook for 5 minutes.
7) Add the tomato paste and coconut milk, bring to the boil for about another 5 minutes. Remove from heat and let cool.
Once cooled pour into a blender with the sweet potatoes, blend till well combined (should help thicken the sauce).
9) Add a little of this tomato sauce to the mince mixture, but not all.
10) Pour a little of the tomato sauce into the bottom of the casserole dish. Add a layer of grilled eggplant/courgettes, then mince mixture, then tomato sauce.
11) Continue to arrange layers, from the bottom: grilled vegetables, mince meat, tomato sauce, till all the ingredients have been used.
12) For the final top layer arrange the sweet potatoes.
13) Bake in a hot oven for about 30 minutes or until the top is nicely browned.
